Squash & Tofurky

What you need: 

1 tablespoon vegan margarine
1 tablespoon extra virgin olive oil
1 baseball sized acorn squash, chopped bite sized
1 small handful green onion, chopped
1 sprinkle garlic powder
1 small pinch nutmeg
fresh cracked pepper and salt, to taste
2-3 slices vegan smoked turkey, diced (I use Smoked Tofurky)

What you do: 

1. Heat margarine and olive oil in a pan. When the margarine is melted, throw in the squash and onions.
2. Sprinkle in the garlic and nutmeg. Season with salt and pepper.
3. When the squash is almost tender, throw in the diced vegan turkey.
4. Cook until the squash is fork tender and slightly brown. Reseason with salt and pepper.
Grab a fork and dig in!! Very simple but absolutely delicious, trust me!
Source of recipe: I came up with this about an hour ago so I haven't been able to play around with it any, but as is, it's really, really wonderful and not needing a thing.

SO HOW'D IT GO?

I was a bit skeptical, but it is so delicious! So much flavor. :) Hearty and filling but not too heavy, which is perfect. Would make a fantastic side dish at Thanksgiving or something like that.

I doubled the recipe because the acorn squash I had was pretty big, and left out the salt, green onions and just used more olive oil instead of margarine. And instead of Tofurky, I used Vegan Dad's seitan lunch meat recipe. To compensate for the lack of "smoke", I added a few dashes of liquid smoke to the squash/meat mixture. I think it would be great with Tofurky though, or really any good meat substitute. Definitely going to make this again!
