Super Quick 'n Easy Decadent Cherry Fudge Cake
1 (18-ounce) box vegan devil's food cake mix (e.g., Duncan Hines)
1 (21-ounce) can cherry pie filling
2 egg equivalents, prepared
5 tablespoons vegan margarine
1/3 cup (non-dairy milk (I use soymilk)
1 cup sugar
6 ounces chocolate chips
This cake is so easy and tastes great! 3 ingredients for the cake and 4 ingredients for the frosting-- or you can just use vegan store-bought frosting and use 4 ingredients for everything!
[u]Cake[/u]:1. Preheat oven to 350 degrees F. Grease 13" x 9" pan.
2. In a bowl, mix together cake mix, pie filling, and egg replacers by hand (the batter will be quite thick). Pour into greased pan.
3. Bake for 40 minutes, or until toothpick inserted in center comes out clean.
[u]Frosting[/u]:4. Melt margarine and soy milk in a pan on the stove-- add sugar and bring to boil, stirring often.
5. Stir in chocolate chips and remove from heat, stirring until the mixture is completely smooth. Pour over warm cake. (The frosting will harden, completely smooth on the cake. The cake is thick and a little chewy-- not airy and light like normal cakes. It tastes great and is always a hit. Yay!)
