1/2 onion, chopped
2 cloves garlic, crushed or 1 teaspoon garlic powder
1 small bell pepper, chopped
1 teaspoon canola or olive oil
1/2 pound firm tofu, crumbled (about 1 cup)
1 tablespoon chili powder
1 tablespoon nutritional yeast, optional
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano
1 tablespoon soy sauce
1/4 cup tomato sauce
6 tortillas, warmed
1. Saute onion, garlic and bell pepper in oil for 2-3 minutes. Add tofu, chili powder, nutritional yeast, cumin, oregano and soy sauce.
2. Cook 3 minutes, then add tomato sauce and simmer until mixture is fairly dry.
3. Place a small amount of mixture into each tortilla, and add any desired garnish.
