TVP "Meet" Loaf

What you need: 

1 1/2 cups TVP
1 1/2 cups boiling vegetable broth
3 tablespoons dried minced onion, rehydrated in water
1 tablespoon dried parsley
1 tablespoon Italian spice mix
1 teaspoon salt
1/2 teaspoon fresh ground pepper
4 ounces portobello mushrooms, diced
2 teaspoons Ener-G egg replacer + 2 tablespoons water
1 cup breadcrumbs
1/4 cup ketchup

What you do: 

1. Preheat oven to 375 degrees F. Mix TVP with boiling vegetable stock in a medium-sized bowl; let sit for 10 minutes or until all liquid has been absorbed.
2. Combine all ingredients except ketchup in bowl and pour into loaf pan or baking dish.
3. Bake for 35 to 40 minutes. Spread ketchup over top of loaf and bake an additional 10 minutes. Cool for 5 to 10 minutes. Serve with more ketchup on the side, if desired.
Source of recipe: After my son begged me for meatloaf for dinner, I started doing some research and cobbled this together using suggestions from about 4 different recipes and what I remember my mom doing when I was a kid.

SO HOW'D IT GO?

I made this last night and it was delicious! The only change was I did 1/2 cup of breadcrumbs and 1/2 cup of oatmeal,  BBQ sauce instead of ketchup and added vegan worchestire sauce. I made sure to press it down into the loaf pan well so that when I cut it to serve it, it stayed together well!

I liked this recipe for the basics of "meet loaf'. Although I made quite a few substitutions & additions. Instead of veggie broth I used 1 cup of tomato sauce + 1/2 cup of water. I added 1 tsp. of vegan worcestershire sauce. Added 1 chopped onion & heated this in microwave. Then basically followed the recipe. Instead of ketchup I used 1 cup of tomato sauce, dehydrated onion, hot sauce to taste, & 1tsp. of worcestershire sauce mixed together & poured on top of the mostly baked loaf. Next time I think I'll add green pepper to the tvp mixture.

This was delicious!  I couldn't get it to stay together like traditional meat loaf, but it was great nonetheless.  I did do a mixture of bbq sauce and ketchup on top.  Great recipe!

I have to say that i followed this recipe exactly except for adding fresh chopped onion to the meat loaf and using bbq sauce instead of ketchup on top. i have to say that this recipe tastes absolutely nothing like the real thing. the meat loaf wouldn't even stay together....instead it just fell apart. And the flavor was nothing to get really excited about. I am definitely new to vegan cooking to try and get healthier, but I have to mention that I am a true carnivore at heart so if you're looking for a recipe that tastes like the real thing, you will definitely have to tweak this recipe or look for another.  :-\

I think I will use this to use my TVP up. I bet this would make great sandwiches!

You can also use flax seeds instead of egg replacer.

sometimes instead of egg replacer i'll use cornstarch mixed up in water much the same.  i think i got the idea from one of veganyumyum's dessert recipes.

also, in reference to an earlier comment re: TVP vs beans, i've made loaves with both, but if you're working with cooked/canned beans, you won't need to add the broth, and you may need more breadcrumbs/oatmeal to firm it up.

it's hard to mess up a veggie loaf. ferreals.

I wonder if I can make this without the "eggs"? I can never find that stuff! What do you guys think?

I was so pleased with how this turned out, I highly recommend this recipe. The only changes I made was adding fresh red onion since I didn't have any dehydrated flakes and some fresh garlic. I just put them both in the food processor and mixed them in finely chopped. I also made a mixture of 1/4 cup ketchup 1/4 cup bbq sauce, some tomato paste and mustard to put on top since I'm not a big ketchup fan. It was super easy to make and really flavorful. I served it with some mashed cauliflower and fresh corn jalapeno cornbread. Great recipe thanks!

thanks .I think I am going to try to make the meat loaf with beans instead..it looks and sounds more appealing
