Vegan Macaroni And "Cheese" Pie With Savory Breadcrumb Topping

What you need: 

1 1/2 cups elbow macaroni
4 tablespoons vegan margarine ( I like Organic Smart Balance)
3 tablespoons whole wheat flour
1/2 cup diced yellow onion
1 cup unsweetened soymilk (not plain soymilk. It needs to say unsweetened)
1 tablespoon lemon juice
1 cup vegetable broth (I like to use Organic Better Than Bouillon vegetable base-1tsp per 8oz water)
1/2 cup firm tofu, drained, pressed, and crumbled
1 cup nutritional yeast flakes
1 teaspoon dry mustard
1/2 teaspoon turmeric
1/2 teaspoon garlic powder
1 teaspoon Bragg's Amino Acids
1/4 teaspoon sea salt
fresh ground black pepper, to taste
sprinkle of paprika
1 cup or more - Arrowhead Mills Organic Savory Herb Stuffing

What you do: 

* I like to use organic ingredients whenever I can. They are more expensive, but if you can swing it, it is well worth it. Better for you, better for the environment!
1. Preheat oven to 375 degrees. Boil macaroni according to directions. Drain, rinse, and set aside.
2. Melt margarine in large saucepan over medium heat. Add diced onion and saute until translucent. While the onion is sauteeing, stir the lemon juice into the soymilk until it thickens up and curdles. Set aside.
3. In a blender, combine veggie broth, soymilk, tofu, nutritional yeast, dry mustard, turmeric, garlic powder, and Bragg's amino acids. Blend until smooth. Set aside.
4. Add the flour to the onion and margarine and whisk until you have a smooth thick roux. Pour the blended mixture into the roux and whisk until smooth. Add the sea salt and pepper to taste and allow mixture to cook for a minute or two, turning the heat down a little if needed. Do not allow mixture to boil, just a low simmer. It will be thick and you don't want it to overcook.
5. Combine the noodles with the sauce in a 2 quart casserole dish. Mix well and sprinkle the top with paprika. Cover the top with a generous layer of the stuffing(or just breadcrumbs). Bake on bottom rack of oven (4-6 inches away from bottom burners) for 20 minutes. Place on top rack and bake another 10 minutes, or until top is golden and bubbly. Remove from oven and allow to cool for 5 minutes before serving. Enjoy!
Source of recipe: After making various versions of vegan mac and cheese over the years and experimenting with ingredients, this is my own final recipe and I think it is a great tasting, savory version that goes great with any meal, especially a Thanksgiving Tofurkey.

SO HOW'D IT GO?

I believe the organic Smart Balance is vegan as well. We always get Earth Balance, all of their varieties are vegan, and delish. Though we're not as crazy about the soy-free version, it's good for those with soy allergies though.

This is my recipe: just wanted to let everyone know the smart balance I use is organic and vegan. That is why I specified in the recipe I use the organic one. The regular ones have all kinds of bad stuff in them like whey, EDTA, artificial flavors. I don't use crap like that in my cooking so no one out there has to worry about bad or non vegan ingredients. I promise I am vigile about that!

OMG, I can't beleive I've not reviewed this yet!!
This is my favourite mac n cheeze recipe ever!  I tend to try any new mac n cheeze recipe I see but this is the one I keep going back to.
I first made it a few months ago, and within the first week I made it 3 times, it was so good (I normally hate eating the same thing twice in one week).

The first time I made it I followed the recipe exactly (but halved just for me and the bf) and wow, yummy!
The next time I made it I used less margarine and it was still delicious.
The third time I made it I had run out of tofu, so I just left that out and it was still great!

So so so good, thanks so much for posting - I'm just about to make it for dinner, as I haven't had it in nearly three weeks and am having serious cravings for it!

Oh yeah - I used soy instead of Braggs because Braggs is difficult to get hold of in the UK, used all purpose flour instead of wholewheat and didn't bother with the breadcrumb topping.
And it is super delicious with broccoli or mushrooms or other veggies mixed in.

God r u gonna post smart balance isn't vegan it has whey in it on every recipe?!? obviously if that many people r including it in their ingredient list it is most likely vegan and ur in the wrong... so do ur research first instead of making a bunch of uninformed posts... its stupid

Now now....while it's true that people should do their research before posting such firm statements, someone else has corrected her already, and informed her and the rest of us which smart balance product is vegan....personally, I'm kind of glad she posted it, so that someone could respond with the specifics.

ANYWAY - this recipe sounds ridiculously scrumptious.  :)

yeah, there is a vegan smart balance lite - it doesn't have whey. the others aren't, though.
