Vegan Sweet Potato Salad

What you need: 

1 or 2 yams, peeled
1 cup vegan mayonnaise
1/2 cup raisins
1/2 cup chopped pecans
3/4 teaspoon ground ginger
1/2 cup red onion
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoon lemon juice
1 to 2 pieces celery, chopped
1/2 red pepper, diced (optional)

What you do: 

1) Boil yams for about 20 to 30 minutes or until a fork can pierce through, but the yams still hold together. Cool.
2) In a large bowl, combine all the ingredients and toss gently with cooled yams.Chill before serving.

I was looking for a different side to go along with tofu loaf and a steamed veggie when I came across this recipe.  It was very easy to preare and was quite delicious.  Thanks for a great recipe Mel!  ;)b
