Warm Curried Chick Peas with Apples

What you need: 

2 tablespoons oil
1 tablespoon curry powder
2 small potatoes, sliced into 1/4 inch slices
2 carrots, sliced into 1/4 inch slices
1 green onion, chopped
1 red pepper, chopped
1 1/2 cups cooked chickpeas
1 cup green beans, chopped into bite sized pieces
2 small apples, peeled, cored and chopped
1 tablespoon apple cider vinegar
salt and pepper, to taste

What you do: 

1. Heat the oil, curry powder, potatoes, carrots and onion in a large skillet. Cover and cook, stirring occasionally until the potatoes are almost cooked through.
2. Add the red pepper, chickpeas and green beans. Cover and cook for another 5 minutes or so.
3. Add the apples, vinegar and salt and pepper, and let cook until the apples melt, stirring occasionally to let them form a sauce.
And enjoy!

SO HOW'D IT GO?

This was the greatest thing I have ever eaten. Ever. I am resisting the urge to completely flip out on here because of how wonderful and amazing this recipe is. A real treat for all of the senses.

My boyfriend put some tofu in his and it worked well. I prefer this recipe on its own but hey, tofu works in it.

This was super YUMMY!  It doesn't' say how long to cook it for, but left it on low for 45 minutes and it was perfect.  I also used okra instead of the beans and added a little cinnamon.

This stuff is amazing!!!  :D  What a combination of colors, textures and flavors!  It really is comfort food, and I'll be making it a lot this winter.  I added a little cinnamon at the end.  Thank you so much for posting this!  I had to create an account just to tell you how much I love it!!
