This recipe sounds great! I only just discovered good Greek Tzatziki sauce using Greek yogurt before going vegan. Then soy yogurt seemed like it would never taste right.
So glad you are enjoying it! While I consider it my signature dish, I make so many variations of it, it hardly remains the same. I've used beet greens, turnip greens, arugula, etc.
What a wonderful idea!!! The first time I made these, they weren't really cooked enough or were maybe even overcooked (?) They were dry. The second time, I boiled the potatoes.
