Black Bean Hash

What you need: 

2 teaspoon olive oil
1 onion, chopped or sliced
3 cloves garlic, minced
1 large red potato, cut into 1/4 inch dice
1 small green bell pepper, chopped
1 cup chopped tomatoes, fresh or canned
1 tablespoon chili powder
1/4 teaspoon cumin
1 15-ounce can black beans, drained and rinsed
1 cup frozen corn, thawed
1/4 to 1/2 teaspoon salt

What you do: 

Heat the oil in a large skillet or pot and add the onion, garlic and potato. Cook over high heat, stirring frequently, for 3 minutes. Add the bell pepper, tomato, chili powder, cumin and 3/4 cup water.
Reduce heat slightly, then cover and simmer until the potatoes are soft, about 10 minutes. Stir in the beans and corn and cook until heated through. Add salt to taste.

SO HOW'D IT GO?

  Next time I don't think i'm going to add the water and do more of a "stir fry".

I didn't use the water, either.  I just used about 1-2 Tablespoons of olive oil and fried everything up, so it was a little crispy.

This was very good, but it wasn't what I was expecting. I followed the recipie but used canned corn because I think frozen corn it too watery tasting. I've never made a hash before, so I was of course thinking hash browns, crunchy potatoes.  The potatoes and other veggies were kind of steamed.  But the flavors were very good. I served this with guacamole.  Next time I don't think i'm going to add the water and do more of a "stir fry".

I made this with black beans and white beans, onion, garlic, one huge Yukon gold potato, carrots and chopped tofurkey.  I added some spices - lemon pepper, dill, chili, and paprika.  I made some simple guacamole and served that on the side with some vegan sour cream and hot sauce.  This was an excellent brunch.  :)>>>
