Curried Chickpea Sandwich

What you need: 

1/2 cup canned chickpeas
paprika,to taste
curry powder, to taste
garlic powder, to taste
2 tablespoons vegan mayonnaise (I use Vegenaise)
3 baby carrots, diced
2 thick slices pumpernickel bread (I make my own)
4 cucumber slices
1 thick slice beefsteak tomato
salt and pepper, to taste
mustard, to taste

What you do: 

1. In a small bowl, use a fork to mash chickpeas with the next five ingredients.
2. Spread this mixture on 1 slice of pumpernickel. Place on top of this mixture, the sliced cucumbers (lightly salt and pepper the cucumbers and tomato, if you wish), and the sliced tomato.
3. On the other slice of vegan bread, smear on the mustard (I love mustard, so I used quite a bit). Sandwich it all together, and enjoy!

SO HOW'D IT GO?

Our family really enjoyed these sandwiches! Thanks for the great recipe. I made 16 sandwiches in 5 minutes, by saving time putting the carrots and mixture all into the processor together. The only recommendation I have is to put it in the fridge to chill beforehand as it is more refreshing when chilled.

I make this recipe ALL THE TIME! It's so delicious. I absolutely love it!! I do make a couple variations though. I omit the cucumber and beefsteak tomato and instead add yellow tomatoes (curtosy of my garden) and avocado. I also use Dijon mustard instead of regular, and seasoning salt instead of regular salt. But either way this recipe is awesome! Quick, easy, and tasty. Thumbs up.

i think curry powder is a wonderful addition to a chickpea salad sandwich... though i had to add some of my personal faves to the recipe which included celery, sweet relish, yellow mustard (mixed in and "mayo" to coat bread), red onion, and celery salt... i also added extra carrots... i find that even sprinkling curry powder on top of your favorite chickpea salad recipe makes it extra tasty :)

This is awesome!!! I added a little sprinkle of curry powder and chopped red onion to the mix, let me say this is fantastic.....its a keeper.... :)
