Moms Vegan Meatloaf

What you need: 

1 pound burger-style crumbles, thawing unnecessary
1/2 cup quick cooking oatmeal
1 tablespoon soy sauce
2 teaspoons Ener-G Egg Replacer beaten with 2 tablespoons water
1/2 medium onion, finely diced
ketchup

What you do: 

Mix all ingredients together and press firmly into a greased loaf pan. Cover top liberally with ketchup and bake at 375 degrees for 35-40 minutes.

SO HOW'D IT GO?

I have never had this in a vegan form. Very good. I made up in muffin pan instead of loaf, came out wonderful. So glad I found this recipe. So now I can eat it whenever...Yum

It never "loafed" and I can't stand soggy food so I didn't even try it.  My boyfriend hates to see food go to waste, though, so he ate it.  Since he's never had meat in his life, he couldn't tell me if it was like real meatloaf or not...

I tried some of the suggestions for getting it to solidify and they didn't work for me.  I will not be making this again.

Hey..my boyfriend was craving a meat loaf, never thought I could duplicate one but here you go!  We made it, used the Yves ground round and used probably 3 times as much egg replacer and really pressed it into the pan and it came out awesome and in loaf form.  I was quite pleased.  Will definetly make this again.  I haven't found another meatless meatloaf recipe in any of my books as far as I know.  Thanks for sharing your recipe!

I used ground flax seed instead of ener-g, and my loaf held up rather well.  I also pressed it firmly into the pan.  Yummy!
