Carrot Hashbrowns

What you need: 

3 potatoes, peeled and grated
3 carrots, peeled and grated
1 onion, peeled and grated
1 tablespoon oil
salt and pepper, to taste

What you do: 

1. Combine potatoes, carrots and onion in medium bowl and mix well. Salt and pepper, to taste.
2. Heat oil in skillet. Dump in potato mixture and form into a large pancake.
3. Cook until browned on one side, and then flip over and repeat. Serve cut into wedges, or just break it up.
Can be served plain, or with applesauce, or vegan sour cream. Yummy, and pretty too!

SO HOW'D IT GO?

I actually didn't care for these. It surprised me, because they looked and sounded amazing. Perhaps if I had used a few paper towels to remove some moisture they would have turned more into hash browns and less into hash mush. The flavor wasn't great either, but the after taste, I will admit, was rather addictive-- that's why my plate ended up clean :3. Maybe I will try making these again at some point, but for now, I have to say I am completely unimpressed. No offense to the poster, these sounded great and it looks like everyone else liked them, so it's probably just me!

Thanks so much for your recipe!  For a recipe for potato pancakes/ ladkes (sp?) we used:

1-1/2 pounds russet potatoes
1 small yellow onion
1/4 cup unbleached all-purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
Safflower oil, for frying

They held together terrifically and when I was talking to my son (chef, cook), he suggested using corn starch to make them crispier.  We haven't tried it that way yet but when I make this recipe I think that's how I'll make it.

I've been making something similar for many years, tasty and a good way to use up leftover veggies, just chop and toss them in the mix.

Wow! That was easy and really nice.  This is a great, quick, dinner option.

I tried this yesterday, and like other reviewers said, it didn't really stick together at all. It was kinda plain too, even though I added a ton of salt and pepper. Sorry, I just didn't like it too much.  :-\

I was a little frustrated with the lack of bonding that the ingredients did.  It was a mess.  It tasted alright though.

very good... i forgot the onion but it still turned out well... served with LOTS of ketchup...thanx for the idea!

mine also didn't stick together at all. Then again, it could be because I parboiled my carrots/potatoes first so it'd take less frying time to cook them through. regardless, it was tasty

I made this for my lunch but it completely fell apart. How much oil did you put in the pan? I shallow fried it and it didn't work, but it was really nice!
