Taco Soup

What you need: 

1 package of burger-style crumbles
1 package vegan taco seasoning
1 can (15 oz) diced stewed tomatoes (do not drain)
1 can (15 oz) red beans
1 can water
crushed tortilla chips
vegan tofu sour cream, optional

What you do: 

Mix crumbles, taco seasoning, tomatoes, beans and water in a large saucepan. Heat until boiling.
In each bowl place crushed tortilla chips, soup, and top with tofu sour cream if you want.

SO HOW'D IT GO?

I made this tonight and it was pretty good. However, the proportions were off, perhaps because the recipe is inspecific. I used a 12 oz. bag of Morningstar burger crumbles and there was so much meat compared to liquid that the soup came out more like a chili. A delicious chili, definitely, but not quite the soup I expected. I might suggest adding another can of water, although in my case that would risk overflowing my large pan.

I'd also say it serves two people, not four. But then, I'm a big eater. So let's make that two "hungry" people.
