Yuca con Mojo

What you need: 

1/2 pound yucca, peeled and chopped to 4" pieces
1 garlic clove, minced
1/4 cup white onion, chopped
3 tablespoons vinager
1 tablespoon water
1 teaspoon coriander leaves
1/2 teaspoon olive oil
salt and pepper, to taste

What you do: 

1. Boil yucca until soft. Use a fork to test it; should break easily.
2. In a small bowl, mash the rest of ingredients together until a soft paste is formed.
3. Add water or vinegar to get a wet, but not so liquid paste.
4. When the yuca is ready, drain it. Pour the mojo over the yuca, serve warm.
