Lima Bean Mash

What you need: 

16 oz package of dry baby lima beans
4 oz of Tofutti Better Than Cream Cheese with Herbs & Chives
1/4 cup of your favorite vinaigrette (I prefer to use a Greek vinaigrette)
1 or 2 garlic cloves, minced

What you do: 

Soak the beans for 24 hours. Cook the beans according to directions.
In a food processor or blender, blend all of the ingredients.
Simmer on stove for 5-10 minutes.
Serve with vegan gravy like mashed potatoes or eat it as is. Enjoy!
*You can also put this in a casserole dish and cover with bread crumbs and bake for 15 minutes.
*Some people like it better if you sauté the garlic first.

This was an excellent recipe, so simple and delicious! My husband calls it the "green potatoes." It may not look that appealing, but it tastes great, and makes a wonderful side dish. I'm not a mashed potato fan, but my husband is and he absolutely loved it! Thanks for posting the recipe.

Potato-dislikers unite! Lima beans create such a perfect texture when cooked and then put through a food processor that you don't even need the tofutti better than cream cheese! The added nutrients and fantastic lima bean taste are a real plus as well.  ;)
I like to make this with just cooked lima beans, a ton of garlic, and salt and pepper to taste - sometimes adding savory spices when the mood hits. Excellent accompaniment to steamed veggies, and even better when a drizzling of tahini sauce over the whole dish. If you really want to be fancy, garnish with cilantro! Yummmmmmmmmmmmmmmm  ;D
