Garlic Pasta and Tofu Galore!

What you need: 

1 block of extra-firm tofu
1 jar of organic pasta sauce (I use one with extra garlic)
olive oil (enough to coat pan, sauté tofu and garlic)
enough pasta for 4 people
fresh garlic

What you do: 

Prep: Slice tofu into small, thin pieces. Marinade tofu in pasta sauce for 1-2 hours in fridge before cooking.
Use a large skillet (everything will eventually go into the skillet) and coat it with olive oil. Use a little more than you normally would to coat a pan (you will be cooking tofu in this).
Press 3-4 cloves of garlic in a garlic press and sauté in the skillet. Cook garlic for about a minute before adding tofu (you don't want it to burn!).
Add tofu slices and cook until almost golden brown. While you're waiting for the tofu to cook, cook the pasta in a separate pot.
Add pasta sauce to the skillet (enough so that the pan is 3/4 filled). Stir around until pasta sauce is heated and mixed with other ingredients. Drain pasta and add. Mix around and serve.
Also very good if you add your favorite veggies into the pan!
