Apple Cake

What you need: 

1/2 cup firm tofu or 4 tablespoons corn starch mixed with 4 tablespoons water
1 cup sugar
1 cup brown sugar
1 1/4 cups oil
3 cups plain flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
4 cups apples, peeled and chopped
2 teaspoons vanilla

What you do: 

1) Preheat the oven to 350 degrees Fahrenheit (between gas mark 4 and 5). Oil and flour a tube pan or cup cake tin.
2) Beat tofu (or mix corn starch and water well). Add sugar and oil and beat for 3 minutes. When using corn starch, I do this using a whisk, but when using tofu, it's best to do this in a food processor. Sift remaining dry ingredients together and add slowly to the creamed mixture. Add apples and vanilla. Stir until well mixed. It will be a thick mixture.
3) Bake for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean. Leave in the pan until almost cool.
Variation: Use 3 cups of apples and 1 of chopped nuts like walnuts, pecans, etc.

SO HOW'D IT GO?

This turned out so great! I had a pint of canned apples from last fall and used them in this recipe. It was delicious.

This cake is absolutely delicious! I make it with a vanilla glaze - yum! The best recommendation I can give it is one from my grandpa who is a die hard chocoholic and he devours this cake whenever I make it.

;)b yummy cake, easy to make. lovely & crispy on the outside & soft on the inside! I used extra virgin olive oil - which in hindsight I should have used canola oil. The flavour of the olive oil was too strong for the cake. Would definitely make this again & I may try some walnuts too!Thanks for the recipe.
