Leftover Almond Pulp Cookies

What you need: 

1/2 cup leftover almond pulp (from making milk or ground almond meal)
1/4 cup yacon syrup, agave syrup, or maple syrup-not raw
2 heaping teaspoons cocao or cocoa powder
1 to 2 tablespoon(s) pecans
1/4 teaspoon vanilla or 1/2 inch of a bean
coconut Flakes, for rolling

What you do: 

1. In a bowl of a food processor, combine almond pulp, yacon syrup, cocoa, pecans, and vanilla; process into a paste.
2. Roll mixture into 10 to 15 balls.
3. Place coconut flakes on a plate. Roll balls in coconut flakes.
4. You can totally eat it like this for an under-baked gooey brownie texture (great with coconut ice cream!) or dehydrate for 2 to 4 hours (flip half way through) and enjoy them in a firmer (and awesomely WARM) way. (I flatten mine to cut down on dehydration time and I like flat cookies.) So easy to make and the possibilities are endless!
