AMAZING Avocado Sandwich with Caramelized Onions

What you need: 

2 slices soft whole wheat bread
1/2 small avocado
1 tablespoon of mustard (preferably "honey" mustard, made with a syrup of choice)
1/2 plum tomato
1/2 small yellow onion
1 tablespoon oil or vegan margarine of choice (I used Earth Balance)
1/2 tablespoon vegan mayonnaise
Salt and pepper, to taste

What you do: 

1) Take the onion half and cut it into rings. Slice those rings in half and then separate them from one another. Then slice the tomato half in to 1/4 inch slices. Heat the oil/margarine in a saucepan and sautée the onions until they are wilted. Add salt and pepper to taste, if desired.
1) Spread vegan mayonnaise on one slice of bread and the mustard on the other. Slice the avocado and place on one piece of bread (with the condiment side up). Top with the tomato. When the onions are finished, top the avocado with those. Place the other slice of bread on top of all of this, condiment side down.
Enjoy!
Note: If you have it on hand, it tastes really yummy to throw in some tempeh bacon for added protein.
Source of recipe: I was digging around in my dorm mini-fridge, and I just sort of threw this together. Surprisingly delicious! I had some avocados I got on sale that needed to be used up and some caramelized onions from dinner the night before. It only took me about ten minutes to make, including cooking the onions. Really simple, quick, nutritious, and filling!
