Apple Ginger Cake

What you need: 

1/3 cup vegan butter, softened
1/2 cup brown sugar, packed
Egg replacer for 2 eggs
1/4 cup unbleached flour
1/2 cup whole wheat flour
1 teaspoon cinnamon
1/2 teaspoon allspice
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon grated fresh ginger
1/4 teaspoon salt
1 large or 2 small apples, seeded and diced
1 cup quick oats, uncooked
1/4 cup chopped nuts
1/4 cup raisins
Non-dairy milk, as needed to get a good batter

What you do: 

1) Preheat oven to 375 degrees Fahrenheit and grease a loaf pan.
2) Cream the margarine and sugar together and then add "eggs". In a separate bowl, mix the flours, cinnamon, allspice, ginger, baking powder, baking soda and salt together. Slowly stir into the margarine/sugar mixture. Mix in apples, raisins, oats and nuts. Add enough non-dairy milk to mix it all together but not so that it's runny.
3) Spread into prepared loaf pan and bake 30 minutes or until a toothpick inserted in the middle comes out clean. Let cool on a wire rack.
Source of recipe: I took an apple cake recipe that I had from my pre-veg days and mixed it up a lil. It came out tasting more like a fruitcake.
