Applesauce Muffins

What you need: 

2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 cup soy milk
1 Tablespoon apple cider vinegar
2 Tablespoons oil
2 Tablespoons maple syrup
1 cup applesauce
1 cup raisins

What you do: 

Preheat oven to 350 degrees F. In a liquid measuring cup and vinegar to milk. In a large mixing bowl mix flour, salt, baking soda and cinnamon. Add the milk mixture, oil, maple syrup, applesauce and raisins. Gently combine until ingredients are just mixed. Spoon batter into muffin tin (usually makes 6 to 7 muffins) and bake for 15 to 20 minutes.

SO HOW'D IT GO?

These were delicious.  I used a teaspoon of cinnamon rather than 1/2, agave syrup instead of maple, and added a sweet crumbly topping, and that seemed to round these out really nicely.  I also made 12 small muffins instead of 6 large ones and the timing was still perfect - just about 17 minutes.  They're not too sweet, and I was worried that I wouldn't like them because I'm usually a sugar fiend.  But they were really good.
