Attack of the Cheesy Broccolini Pasta

What you need: 

A couple of dashes of salt, or sea salt.
2 tablespoons nutritional yeast
1 1/2 tablespoon vegan butter
Olive oil
1 serving dry pasta of choice
1 stock broccolini

What you do: 

1) In a medium pot bring to boil enough water to cover pasta. Add a dash of salt and a swig of olive oil to your boiling water. Add pasta to boiling water, stir, and cook according to package instructions.
2) While the pasta is cooking clean and drain broccolini. Heat a frying pan over medium heat. Add a swig of olive oil to the pan. Chop broccolini. The stems are highly nutritious, but if you're going for that good old fashioned broccoli and cheese taste I suggest you leave the stems out. Heat broccolini covered on medium heat for about 2 minutes. Be careful not to burn the delicate greens.
3) Your pasta should be done now. Drain pasta and rinse if desired. Transfer pasta back to pot. Add vegan butter and swirl till dissolved. Stir in broccolini, nutritional yeast, and add salt to taste. Enjoy.
