Baked Doughnut Nuggets

What you need: 

Donuts:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup vegan butter, at room temperature
1/3 cup sugar
1 egg substitute (I use 1 tablespoon ground flaxseed + 3 tablespoons water)
2/3 cup nondairy milk (I use soy) Topping:
2 tablespoons powdered sugar
1/4 teaspoon ground cinnamon

What you do: 

1. Preheat oven to 350 degrees F. For donuts, combine flour, baking powder, nutmeg, and salt in medium mixing bowl.
2. In a separate bowl, whip butter and vegan sugar until light and fluffy. Beat flax and water together for egg, and let sit 1-2 minutes.
3. Add egg substitute to butter mixture, and beat until well-blended. Add 1/2 the flour mixture, mix; stir until smooth. Add 1/2 the milk; stir again until smooth. Repeat.
4. Spoon batter into miniature muffin tins until 2/3 full. Bake for 20 minutes. Let cool 5 minutes before removing.
5. For topping, in a bowl, combine powdered sugar and cinnamon. Roll nuggets in sugar mix, and enjoy!

SO HOW'D IT GO?

Love these!  Not exactly the texture of traditional doughnuts, but they have a great doughnut taste and are delicious!

My donuts didn't look anything nearly as gorgeous as some of those pictures, haha. My little sister loved these when I made them and donuts were her favorite food before she went vegan. Thanks for the recipe!

i made these for breakfast this morning and i couldnt believe how delicious they were.  I just added the cinnamon to the dry mix and dipped them in some chocolate sauce. they taste terrific by themselves though. thank you for the recipe!! :)

i just made these and they are so good. i think i like these better then real doughnuts. i made a sugar glaze, a chocolate glaze and the sugar cinnamon from the recipe. if you use the topping from the recipe the nutmeg is good but i think next time i'm going to just make a chocolate glaze and put less nutmeg. im going to get so fat from these. they are too good.

oh and i also used half whole wheat flour, half applesauce for half the soy butter, and the ener g egg replacer.

I used a variety of toppings: powdered sugar, cinnamon sugar, chocolate, and glazed. If you put powdered sugar on them, they taste exactly like the Hostess ones you used to get in a box in the pre-vegan days. But these are much better.

You picture looks wonderful!  What did you bake them in to make the doughnut shape?

Biodancer, I used a mini bundt pan thingie...it has twelve "cups" like a cupcake pan except they are shaped pretty.  :)

They turned out beautifully, VS!!!  I wish I liked doughnuts!

OK so i tried one of the doughnuts and it was awful :( it was too thick and the peanut butter taste over whelmed the doughnut so i don't suggest to anyone using peanutbutter

I'm sorry that no one responded to your peanut butter question before you made these, but I think the reason you had a problem is that the recipe doesn't call for soy NUT butter, just soy butter. By that the author means a vegan butter replacement such as Earth Balance or Willow Run - a very different product from nut butters. I'm sorry it didn't work out for you. :-(
