Cabbage, Soysage and Noodles

What you need: 

olive oil
1 onion, diced
1 granny smith apple, peeled, cored, diced into 1" cubes
1 roll (14 ounces) sausage style vegan meat (I use Lightlife sausage style), sliced to 1" cubes
1 small head savoy cabbage, thinly sliced
1 cup vegetable broth
2 tablespoons caraway seeds
1/2 pound vegan egg noodles (the broader the better)
vegan margarine

What you do: 

1. In a saucepan, drizzle olive oil. Toss in diced onion, apples and soysage. Cook until browned about 8 minutes.
2. Add cabbage, vegetable broth and caraway seeds. Bring to boil. Cover reduce heat to simmer, let simmer for 20-30 minutes, until all broth is evaporated and cabbage is tender (may need to add more broth if it looks like it's drying out too quickly).
3. Meanwhile, in a separate pot, boil noodles according to package directions. Drain when finished. Add noodles to cabbage mixture, and add margarine; stir.
From what I've heard this is a take on a German recipe.

SO HOW'D IT GO?

this was so delicious, it reminded me of my german grandmother. i substituted cloves, dill, mustard and sage for the carway (the co-op didnt have it). And i added a splash of cider vinegar so it was sweet and tangy. i cant wait to have the leftovers.

;D  This recipe is sooo yummy!  I took it to a Octoberfest party and potluck. I used Boca Bratwurst -2 pks since I doubled recipe.  Just put the frozen links in mix during cooking and removed them and sliced them and replaced. My market was out of "Savory" cabbage and the produce man said Napa was the next best.  So I used Napa cabbage,  I also used whole wheat eggless large noodles.  I got rave complements on this dish!
