Chokitos

What you need: 

8 oz (240 gr) dates
4 oz (120 gr) plain vegan chocolate
4 cups puffed rice cereal
6 oz (190 gr) margarine
1/2 cup sugar
2 tablespoons soy milk
2 cups dry fruits/nuts (mixture of almonds, cashew nuts, peanuts, walnuts. etc, + preserved fruit such as pineapple, ginger, papaya, mango etc)
Couple of handfuls of desiccated coconut

What you do: 

Warm margarine, vegan sugar and soymilk. When margarine melts add small pieces dates. When dates soften squash them with a fork and add chocolate pieces. When chocolate melts take pot away from the heat (do not overheat the chocolate, just allow it to melt). Add the chopped nuts and preserved fruit (chopped into small pieces). Add the puffed rice cereal. Add 2 - 3 drops of vanilla essence if you wish. Mix all ingredients together. Spread desiccated coconut on a large tray. Spread the mixture on the tray. Spread more coconut on top and press down evenly using fingers. Let it cool and cut into pieces.
This recipe can be made without the sugar and still tastes yummy, as the chocolate, dates and preserved fruit sweeten it enough.
I put these Chokitos in a plastic bag and freeze them. I always have something to serve with a cup of tea if someone pops in unexpectedly.
