Coconut Whipped Topping

What you need: 

1 (13 1/2 ounce) can coconut milk
1/2 (12 ounce) package extra firm silken tofu
2 1/2 tablespoons turbinado sugar
1 teaspoon vanilla
3 dashes salt
2 teaspoons instant Clear Jel

What you do: 

1. Blend first 5 ingredients in blender until smooth.
2. While still blending, sprinkle in Clear Jel. Chill to thicken. Stir briefly before serving.
This is excellent as whipped cream replacement such as on desserts, or to mix in non-cooked recipes calling for whipped cream, such as [b]cranberry salad[/b].
