Creamy Tomato Penne with Spinach

What you need: 

1 jar of your favorite pasta sauce (I like Trader Joes 24 oz Vegetariana Ragu sauce, which is a vegan tomato meat sauce)
1 16 oz package dried penne pasta
10 oz frozen chopped spinach (Fresh would also work fine)
4 T vegan cream cheese, or to taste
4 T vegan parmesan alternative

What you do: 

Cook pasta according to package directions. While pasta is cooking, heat the jarred pasta sauce. Drain the cooked pasta, and combine it with the pasta sauce. Remove from the heat, and stir in the cream cheese and the parmesan. Serve and enjoy!! This a very speedy and delicious dish.

I made this last night and my picky husband loved it.  He said it was 8 out of 10 wich is high up on his scale. I made my own parmesan style cheese that everyone loved, especially my 2 1/2yr old. I took a cup of almonds and put them in the food processor till they looked the right consistancy. Then I added about a cup of nutritional yeast flakes. Finally I added a ton(I like alot) of salt and a ton of italian seasoning mix. I blended it for a couple more pulses, and Voila!

What would be a good sub for the cream cheese? it's so darn expensive. I was thinking maybe silken tofu.

anyone tried this with something other than wallet-bustin' Toffutti cream cheese??

we LOVED this! didn't have any vegan cream cheese, so used tofutti sour cream instead and it came out AMAZING!!!!! this is being added to the regular rotation :)

I made this for dinner today, and my husband and I DEVOURED it. I added broccoli and seitan to the sauce. I made sure he had leftovers for lunch!  :P

This turned out great! As I mentioned in my earlier post, I added some sauteed garlic and onion. I used mushroom-flavored spaghetti sauce, and light "regular" cream cheese instead of vegan. I also cut the amount of spinach in half because my husband isn't really fond of it. However, he likes this recipe very much, and even brought some leftovers to eat on his break. This will become a regular dish in our house! Thanks!

This sounds awesome! I'm going to make it tonight, but will add in some sauteed onion, garlic, and mushrooms. Some chopped, fresh basil might be nice stirred in right before serving.

YUM! I am eating this right now! I used Prego fresh mushroom sauce0- a 14 oz jar. A few minutes before the pasta was done I threw in some asparagus. I also added toasted pine nuts after mixing the sauce with the pasta.
