Dickinson Carob Cake

What you need: 

3 cups sifted flour
2 cups sugar
2 teaspoons baking soda
1 teaspoon salt
6 tablespoons carob powder
3/4 cup salad oil
2 cups lukewarm water
2 tablespoons apple cider vinegar
2 teaspoons vanilla

What you do: 

1. Preheat oven to 375 degrees. Sift flour,sugar,baking soda, salt, and carob powder into mixing bowl. Add remaining ingredients and mix thoroughly
2. Pour batter into greased and floured 9x13 inch pan. Bake in preheated oven for 30 minutes
3. Once cool, ice with favorite frosting. I use the following icing recipe: http://www.hillbillyhousewife.com/tag/vegan-chocolate-frosting

This recipe is from Dickinson College dining services.  I asked them for the recipe when I graduated because I loved it so much!
