Dry-Roast Granola

What you need: 

2 cup rolled oats
2/3 cup chopped nuts
1/2 cup wheat germ
2/3 cup sesame seeds
2/3 cup sunflower seeds
2/3 cup shredded coconut
1/2 cup packed brown sugar
1/2 teaspoon salt
Raisins and chopped dried apricots - as much as you think you'd like.

What you do: 

Here is a wonderful granola recipe that has no added oil or syrup and is cooked easily on top of the stove.
Use a large heavy skillet (preferably cast iron - but a wok or any deep pan will work). Place the oats and the nuts in the skillet and heat on medium to medium low and stir constantly for 5 minutes as they begin to roast.
Add wheat germ, sesame seeds, sunflower seeds, and coconut. Keep stirring for another 10 minutes.
Sprinkle brown vegan sugar and salt. Cook for 2-5 more minutes, still stirring.
Remove from heat, cool, add fruit and store in airtight container.
Note: You can eat this with vegan yogurt mixed in (we use 1% plain yogurt). Its a tasty low fat way to give your body a great boost in the morning (or anytime).
