Easy Soda Cake

What you need: 

1 box vegan cake mix
1 12oz can of soda pop

What you do: 

This is literally the easiest thing to do. Pour the dry mix into a bowl and smash any lumps with a fork. Open the can of soda and pour in, mix with a spoon until just mixed. Pour into greased pan or cupcake papers and bake as directed on the box. You wouldn't think this would work, but it does. They are a bit more crumbly than normal but very moist! Play with the combinations- my favorites are orange soda in a lemon cake or black cherry in a chocolate one... Cool completely and ice with your favorite icing or sprinkle with fresh fruit and powdered sugar.

SO HOW'D IT GO?

I used cream soda and it was yum. It worked better than the soy yogurt that I used in another batch.

do you think this would work with beer?

i haven't made this cake, but i saw your comment and i think the answer would be no.  i'll be the reason pop works is because it's acidic, and beer is not

I made this over the weekend. I used Zevia brand orange soda which is sweetened with Stevia instead of refined sugar. I made chocolate cupcakes and a vanilla cake...both turned out great and my omni friends loved them.
