Feel Good Summer Pasta Salad

What you need: 

2 tablespoons olive oil
1/3 cup chopped red and/or green bell peppers
1/3 cup chopped carrots
1/4 cup chopped celery
1/4 cup chopped onion
8 ounces dry multi-colored bow-tie pasta, prepared according to package directions and cooled
1/3 cup avocado basil mayonnaise
2 tablespoons Italian dressing

What you do: 

1. In a pan, heat olive oil over medium heat. Add bell peppers, carrots, celery, and onion. Saute until soft, stirring occasionally.
2. In a bowl, stir together the vegetables, pasta, avocado basil mayonnaise, and Italian dressing.
Source of recipe: i made this recipe because i love a good pasta salad on a sunny afternoon.

SO HOW'D IT GO?

Pretty good. I didn't add the Italian dressing, and probably used less avocado in the dressing than called for (mine are small). It vaguely seems like guacamole + pasta, but that's not really a bad thing =)

I really want to try that mayonaise...just have to get to the store to get an avacado and basil!
