Fluffy Coconut Waffles

What you need: 

2 cups oat flour
1 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon sugar
1 banana
1 cup coconut milk (I used lite)
3/4 cup nondairy milk (I used rice)
1 teaspoon vanilla extract (can use coconut, if you have it)
1 tablespoon canola oil
1/3-1/2 cup shredded coconut

What you do: 

1. In a large bowl, mix together dry ingredients (except coconut). In a separate bowl, mash banana very well and add remaining wet ingredients to it. Add wet to dry and stir until just mixed. Fold in the coconut.
2. Let sit for at least 10 minutes, or it will be too runny! I often put mine in the fridge overnight. The consistency of the batter may change depending on the size of your banana, so add a little flour if it seems too loose or add more milk if it seems too stiff.
3. Pour batter into waffle maker and follow manufacturer's instructions.

SO HOW'D IT GO?

What did ya'll use to put on top of these...maple syrup just doesn't sound right...so was curious what worked for you!  I can't wait to make these. =)

I'm ashamed to admit that I often use a chocolate sauce on these waffles, haha.  I've also done pineapple and/or strawberry syrup and that was pretty good.  Soy whip would probably be awesome here too.

The lime zest does sound like a good addition to the coconut, I have a recipe for white chocolate macadamia cookies with coconut & lime juice-- yum!

I have made these in bar form also...I just don't grind all the oatmeal up!  I also add less liquid, just enough to hold it together.  You'll have to post the recipe if you use it for a dessert, cause I loooooove coconut   :>

Icephrosty: When you made them in bar form, how long did you put on the oven and what temp? Please tell, my bf loves this recipe!

I spread them into an 8 x 8 pan and cooked for about 12 minutes at 350 degrees.  I like my bars pretty soft, so if you like a crunchier final product then just leave em in a few minutes longer.  I also like to cover the top in melted chocolate, or mix in chocolate chips before baking!

I had a waffle craving this afternoon, so out came the waffle iron. These were scrumptious! Lime zest sounds like a great addition, and I will try that next time I make these.  I poured the first waffle and immediately got a little nervous because I forgot to spray the grids. I was certain that the rest of my afternoon would be doomed to cleaning the waffle maker, but not so. They came out like a breeze, probably because of all that coconut fat in them (I used full-fat coconut milk). This recipe made 6 regular-sized (not Belgian) waffles in my iron with 1/2 c batter per waffle.
