Four Bean Salad

What you need: 

1 (15-ounce) can garbanzo beans
1 (15-ounce) can green beans
1 (15-ounce) can kidney beans
1 (15-ounce) can wax beans [u]Dressing[/u]:
1/2 large onion, chunked
1/2 cup sugar
1/2 cup vegetable oil
1/2 cup vinegar
1 teaspoon salt
1/2 teaspoon pepper

What you do: 

1. In a bowl, gently mix together garbanzo beans, green beans, kidney beans, and wax beans.
2. Dressing: In a blender, blend all dressing ingredients (onion, sugar, vegetable oil, vinegar, salt, and pepper).
3. Chill overnight. Enjoy!!

SO HOW'D IT GO?

YUMMY!!!!!  LOVE this recipe! - minus the sugar.  It's so easy and versatile (I'm sure you could use black beans, corn, tomatoes, or any other combination), not to mention CHEAP!  I did not add the sugar at all and it was still fantastic.  I didn't get tired of it and my boyfriend keeps asking for it even after it's long gone.  I recently started adding more vegan dishes to my diet and this couldn't have been more perfect.  It's my go-to for any party that I need to bring a dish and the best part is that I don't have to worry about it going bad if it sits out (like at an outdoor potluck or picnic) because there are no dairy or egg products in it.

WAAAAAYYYY too much sugar in that dressing. It was over powering (and I only added a little of the dressing to the salad). Adding some soysauce and cooking off the sugar helped make it edible. (On the other hand my mother didnt think the sugar was too much)
I will make this again but I think I will omit the sugar.
