German Potato Salad

What you need: 

1 lb. potatoes, cut into quarters
3 tablespoon Vegenaise (vegan mayo)
2 tablespoon packed light brown sugar
1 teaspoon spicy brown mustard
3 tablespoon cider vinegar
green onion
fake bacon bits

What you do: 

Boil potatoes until tender. Drain. Stir vinegar over potatoes. In another bowl- mix together vegan mayo, brown vegan sugar,and spicy brown mustard. Mix together with potatoes. Garnish with green onion and fake bacon bits. Best if chilled for 1 hour.

This potato salad is often my date to potlucks, and it's always a huge hit. I love to make a batch just for myself every few months, too. I omit the sugar, add purple onion, use the Annie's Horseradish mustard, and make a fair amount of Smart Bacon and crumble it in. Fakin' bits just don't compare to the freshly made stuff.


I have made this three times but always omit the sugar. One time I added purple onion, and everyone liked it. The color and the crunch made it a bit more substantial. Last time I used Annie's Horseradish Mustard, and it was really great! It's also outstanding left over.
