Grammy Cooks Banana Bread
What you need:
1 1/2 cup whole wheat pastry flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons flax seed meal (ground in the blender)
2 tablespoons corn meal
1/4 cup oil
1/2 cup cane juice crystal or sucanat or combination
1 cup mashed bananas
1/2 cup water
1/2 cup chopped walnuts or pecans, optional
What you do:
Mix first six ingredients well.Mix next four ingredients well.Mix both together and stir in nuts if you want.
Pour into sprayed loaf pan and bake at 350 for 45-50 minutes.
I have tried many banana bread recipes on VegWeb and have yet to taste one as good as my moms. So I got her recipe to share and here it is!
She is the BEST COOK in the world! She can make anything taste good!

The best banana bread just became the best pumpkin bread. I served this recipe substituting pumpkin for the bananas and added a teaspoon of pumpkin pie spice (you might want a little more) and all the ladies at the bridal shower gobbled it right up!

I used 1 cup spelt flour, almost 1/2 cup millet and one massive tablespoon of light buckwheat flour (I love buckwheat in banana bread), plus I substituted melted Earth Balance ("Buttery Sticks") for the oil and used Just Us fair-trade oraganic cane sugar for sweetner. I have pretty much the same sentiment as all of the above commenters: didn't rise a lot but light&fluffy, great texture and tastes amazing. Thanks!
This banana bread is very delicious. I made it with spelt flour instead of wheat flour and it was still awesome! I'm frankly a little concerned that I might eat most of it by the time my boyfriend gets home from work. Man...so good.
you know, this is like one of the only recipes I've made to turn out!! :D This banana bread is totally DELICIOUS and moist and perfect; I would never guess it's vegan! Tastes best after cooled with a tad of butter. I'll enjoy this recipe for awhile...thanks!!!

This is the best banana bread ever!!! I score a whole bunch of organic bananas so I made a lot of banana bread (some with whole wheat, some with white flour, some with walnuts and some without)in all instances I used corn flour rather than corn meal...this turned out sooo good!! I also made muffins!! All my friend are going crazy and demanding more!!! (luckily I scored some more organic bananas! ;-)
This is a great recipe! It's a bit different from the usual banana bread- lighter, and the cornmeal adds a nice texture. I used a mixture of regular whole wheat flour and white flour, and it turned out great. I also added a touch of cinnamon. I'll definitely be making this again.
This is an excellent banana bread recipe. I used regular whole wheat flour because I didn’t have pastry flour, plain soymilk instead of water, and omitted the sugar. The bread was delicious, cooked all the way through, and the bananas made the bread sweet enough without the added sugar. Absolutely delicious!
We love this bread, too! It's light and fluffy, and the cornmeal adds a great texture! I use just regular unbleached flour and evaporated cane juice and it's perfect every time. Organic bananas were on sale for $0.39/lb so I made a bunch of loaves and have some in the freezer - I will post back after I thaw one and let you know how they take to freezing. This is our banana bread standard recipe now:) One thing though - I used Rapadura for the sugar last night and I think it changed the texture. It made it kind of gummy, so I am sticking with evaporated cane juice. Thank your Grammy for me!!!
wow, i'm impressed. i've tried banana bread a few times with usually gummy and fairly bland results - this has a great texture and is very yummy. i used regular whole wheat flour, a heaping tsp of allspice, left out the flax as i didn't have any, used fat free soymilk instead of water, and sprinkled the top with cinnamon. the house smells fantastic.
