Grilled Avocado and Tomato Sandwich

What you need: 

1/3 avocado, mashed
vegan butter (I use Earth Balance)
1 roma tomato, sliced 1/4" thick
2 pieces whole grain vegan bread
fresh basil leaves, optional
sprinkle red pepper, optional

What you do: 

1. Preheat pan on stove over medium heat while preparing the sandwich.
2. Slather each bread piece with vegan butter. Spread mashed avocado on the inside of each bread piece. Arrange tomato to cover bread.
3. Add optional ingredients if desired and put together. Place in frying pan and grill until desired brownness on each side.
Enjoy!

SO HOW'D IT GO?

So delicious! A local restaurant makes a vegetarian sandwich similar to this, and I've been missing it dearly since going vegan. This was the perfect solution... great with a big, fat salad!

This was soooooooo goood! So good in fact, I had 2 :) good job it was on small slices of bread haha :D
I used homemade tofu mayo, wholegrain mustard, sliced vine tomatos and a sprinkling of dried basil (didnt have fresh) salt,pepper and chilli powder.
It was divine! And I wouldnt consider myself a massive avocado fan either! I'm a convert now  :)>>>

Numnumnum! This was very good! I used plum tomatoes- they actually didn't make the sandwich soggy at all.  :)>>>

I love Avocado sandwiches!! I am usually too lazy to grill them (or busy babysitting!), they are good cold too. But they are EXTRA yummy grilled. What I do is use 1 whole avocado (once in a while half), and homemade bread topped with a tomato slice depending on my mood  ;D
With cold I usually just throw some dried herbs on top (basil, cloves, whatever), as it's quicker. If you have time u can mix it in with the avocado. I used Fresh Cilantro and basil (right off the plant!), and some cloves sprinkled on top the avocado mixture. Warm and delicious  ;)b

BTW I really wanna know if anyone shares in my love of cloves, I've been obsessed with them for quite some time now  ::)

I have had this twice for lunch since i found out about it less then a week ago.  I melted the butter and used a brush to apply it on the bread evenly. Earth balance alwas gives be a bit of a go every time i try to spread it, no matter how long i let it sit out of the fridge before use. I then added crushed red pepper to the butter, which gives this amazing sandwich a great kick! xD

This is my new favorite sandwich -- it's delish!  Super simple too, and great when you don't have much time to throw something together.  I spread vegenaise inside the sandwich first before adding the mashed avocado, then thick tomato slices pressed with a paper towel to absorb excess moisture, then sprinkled with salt and the red pepper.  Spicy fries are a great side to go along with it.

great sandwich!!!  I diced up the tomato drained any juice and added to the avocado with a little squirt of lime and chopped cilantro.
