Happy Mama Cookies

What you need: 

6 tablespoons water
2 tablespoons flaxseed meal
1 cup vegan margarine (I use Earth Balance)
1 cup sugar
1/4 cup water
2 tablespoons brewer's yeast
1 teaspoon vanilla
1/2 teaspoon orange peel
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups rolled oats
1 cup chocolate chips
1 cup chopped walnuts

What you do: 

1. Egg Replacer: In a small dish, combine water and flaxseed meal; let stand for 10 mintues.
2. Preheat oven to 375 F.
3. In a mixing bowl, cream margarine and sugar. Add flaxseed mixture and stir until well blended. Add water, brewer’s yeast, vanilla, and orange peel; stir until combined.
4. In a separate mixing bowl, sift flour, baking soda, and salt. Add to wet ingredients. Add oats, chocolate chips, and walnuts. Drop by rounded spoonfuls onto baking sheet.
5. Bake for 10 minutes on the medium rack, or until the top is golden brown and the top is slightly hardened when light pressed.
These are a variation on lactation cookies made with orange peel and walnuts for their stress relieving properties. Enjoy!

I made these (but without orange and walnuts, simply because I didn't have them on hand) and they came out great.
