Hash for One

What you need: 

1 organic potato, diced small
1 small organic onion, chopped
1 large clove organic garlic, minced
1/2 teaspoon rubbed sage
Sea salt & pepper
1 tablespoon extra virgin organic olive oil
2 links or patties of breakfast "sausage" (I use Yves)

What you do: 

1) In a heavy skillet, heat the oil over medium low heat and add everything else. Sprinkle with a bit of sea salt. Stir well and cover. After about 5 to 7 minutes, when it's smelling good, uncover and stir it well. Get up all the "crusty" bits, and re-cover it. After another 5 to 7 minutes, uncover, stir and make sure the potatoes are all soft. Serve hot with a grind or two of pepper. Yum--easy and satisfying breakfast!
