Jessicas Vegan Bolognaise Sauce

What you need: 

dried soya mince, 30 gr
olive oil, 1 tablespoon
onion, chopped, 1/2
garlic, chopped, 1 clove
carrot, chopped, 1/2
tinned tomatoes, 1 tin
vegetable stock, 75 ml
fresh basil (Bart Spices), 1 teaspoon
fresh Mediterranean herbs (Bart Spices), 1/2 teaspoon
yeast extract, 1 teaspoon

What you do: 

Place dried soya mince in a bowl and cover with boiling water. Leave to soak for 1 minute, drain and put aside. Heat the olive oil in a saucepan, add the onion, garlic and carrot and cook for 2-3 minutes. Add the prepared soya mince, tomatoes, stock, herbs, yeast extract and simmer for 20-25 minutes. Transfer to a warm serving plate and serve with spaghetti.

SO HOW'D IT GO?

This is a nice recipe!
Notes: I used frozen soya mince instead of the dried one, a lot more fresh basil and a couple freshly chopped tomatoes and 2tsp puree. I like soya fan but most of the minces I don't fancy much, a veg bolognaise with mushrooms might be a good alternative.
