Just Like Egg Tofu Sandwich

What you need: 

1/3 pound firm tofu, grated
3 tablespoons chopped onion
1 tablespoon parsley
pepper, to taste
1 tablespoon vegan mayonnaise
4 slices whole grain bread

What you do: 

1. Place tofu in bowl, and add onions, parsley and pepper.
2. Mix in mayonnaise thoroughly.
3. Apply mixture to vegan bread and eat as sandwich.
Tastes just like an egg salad sandwich!
