Lentil Rissoles (Green Patties)

What you need: 

1 cup green lentils
1/2 finely chopped onion
Bread crumbs and/or flour
1/4 cup finely chopped spinach (optional)
finely chopped parsley sprig
dash of black pepper to taste
dash of kosher salt to taste
dash of cumin
olive oil for frying

What you do: 

I picked up this recipe many years ago in Australia.
Cook the lentils in water until soft and mushy. Add all the other ingredients. Add breadcrumbs until mixture is somewhat stiff and can be formed into patties.
After forming into patties, coat with either breadcrumbs, matzo meal, flour or any combination.
Fry in oil until browned on both sides. They are good either hot or cold.

SO HOW'D IT GO?

I was searching for ideas to make both spinach and lentils into finger foods for my toothless 10-month old who far prefers to feed himself than to be spoon fed.  This worked great and tasted good to the whole family!!!  They were also very pretty.

I sautéed the onion before adding it to the mix, used about a cup of steamed spinach and pureed the spinach, lentils and onion in food processor before adding the flour and forming patties.  I also added about 1/4 cup nutritional yeast and used hardly any salt.  For myself I would have added more salt but since the baby ate them w/o the salt I'll keep making them that way.  I think next time I will also add a few garlic cloves with the onion - that might add some more flavor w/o needing to add salt.  Might also experiment with a little bit of vital wheat gluten in them.
