For the Love of Squash Casserole

What you need: 

1/2 cup margarine
1 large vidalia onion, chopped
4 large ( or 6 small) yellow squash , sliced in thin rounds
20-30 vegan buttery style cracker rounds, crushed (like Ritz)
1 cup shredded vegan mozzarella cheese, divided
salt and pepper, to taste

What you do: 

1. Preheat oven to 375 degrees F. Put a large pot of water on to boil for squash. Melt the vegan margarine in a large saute pan over low heat, and saute onions until translucent.
2. Boil the sliced squash for about 2 minutes to soften, and then drain well. Add the softened squash to saute pan, and then add the crushed crackers and all but a small handful of the vegan cheese.
3. Mix well to coat all of the squash with the onions, crackers and vegan cheese. Salt and pepper, to taste.
4. Put mixture in casserole dish that seems appropriate, and top with the remaining vegan cheese. Bake for 30 minutes or until sides are bubbly.
This is my husband's favorite comfort food.
