Macoroni and cheese

What you need: 

olive oil
1/2 red onion, chopped
1/2 pound mixed frozen vegetables (I use organic)
1/4 teaspoon pizza seasoning
1/4 cup nutritional yeast flakes
2 cups nondairy milk (I use organic soy)
1/2 block (5 ounces) vegan cheddar cheese (I use Follow Your Heart), shredded
1 teaspoon curry powder
1 teaspoon spicy mustard
salt and pepper, to taste
garlic powder, to taste
dried parsley, to taste
1 box (12 ounces) organic wheat rotini pasta

What you do: 

1. In skillet, saute onions in olive oil until translucent. Add frozen veggies, and a few tablespoons water. Add pizza seasoning, cover and let defrost and saute a bit more.
2. Meanwhile, in saucepan, add milk, shredded cheese, nutritional yeast, mustard, and spices. Let simmer under a low-medium heat, stirring occasionally to melt cheese.
3. Check on veggies to make sure they are sauteed and defrosted. Put aside when done. Put up pasta water for boiling. Once boiled, add pasta. Drain when cooked. Add pasta to bowl, and add cheese sauce as well as veggies. Mix to coat and voila. Yummy goodness!
Source of recipe: Just kinda winged in and threw this together. Came out delish, and shared it with my boyfriend. He is a picky eater and he liked it.
