Mexi Stirfry

What you need: 

1 can black beans, drained and rinsed
3 fresh tomatoes, chopped
1/2 cup corn, frozen or canned
1 jalapeño pepper, chopped
1/3 cup unsweetened applesauce
1/4 teaspoon ginger powder
1/4 teaspoon cumin
1/4 teaspoon coriander
salt and pepper to taste
1 tablespoon vegetable or olive oil

What you do: 

Heat the olive oil in a large skillet [ I like cast iron]. Toss everything in and let cook for about 15 to 20 minutes, or long enough to cook some rice or couscous.
Stir occasionally, and when your side dish [rice, couscous, quinoa, etc.] is ready, spoon into your serving bowls and eat!

a little sweet, mildly spiced. Much quicker than stewing beans forever.
