Momma's Vegtastic Chilli

What you need: 

1 big onion, diced
2 big carrots, chopped
2 stalks celery
1/2 green pepper
1/2 red pepper
1/2 red chilli (medium hotness), diced
1/2 courgette
2 cloves garlic, crushed
chunk of ginger, peeled and diced finely (1 cube of about 1 inch wide, high and deep)
2 cans chopped tomatoes
2 cans kidney beans (500g)
1/2 tin chickpeas
1 teaspoon cumin
1/4 teaspoon cayenne pepper/hot chili powder

What you do: 

The vegetables listed here are optional of course! Whatever veg you have in the house is likely to work really well too. When my mum came up with this she sliced the veg into pretty chunky pieces too, but it really depends on taste!
Stick on the diced onion to fry in a big pot. When it softens, start adding the rest of the vegetables (celery, peppers, courgette or whatever you're using) as soon as they've been chopped. Add the crushed garlic too at this point. Fry these for about 5 or 10 minutes until they start to soften, stirring every few seconds.
Then dice the ginger and the red chilli and add those into the pot, and stir well. After about 5 minutes, add the cumin and cayenne pepper then throw in the chopped tomatoes and then the kidney beans.
Leave to simmer for about 30 to 45 minutes or until the carrots or harder vegetables are nice and soft!
Serve with brown rice or just on it's own in a big bowl- so tasty :)
Plain Soya Yoghurt or Hummous also go very well on top to cool it down slightly if its too spicy!
