Oatmeal Cookie Chunk Breakfast

What you need: 

2/3 cup unsweetened nondairy milk (I use plain or vanilla almond)
1/3 cup old fashioned oats
1/4 teaspoon kosher salt
1 teaspoon chia seeds
1 frozen banana
1/2 teaspoon ground cinnamon
1/2-1 tablespoon agave or pure maple syrup
1/4 teaspoon vanilla extract
1 teaspoon dark chocolate chunks or cacao nibs

What you do: 

1. Combine milk, oats, and salt in a medium saucepan, and bring to boil. Reduce to simmer and add chia seeds.
2. While the oats are cooking, combine the frozen banana and cinnamon in a food processor and process until smooth and creamy, scraping down the sides as needed.
3. Once the oats are done, remove from heat and stir in agave/maple syrup and vanilla extract. Pour into a bowl and top with frozen banana mixture. Finally, sprinkle with chocolate/cacao nibs.
Source of recipe: I was craving a particular flavor of ice cream made by the famous male duo and came up with this concoction for breakfast!
