Peace Cookies

What you need: 

1/2 cup cooked quick-oatmeal
1/3 cup Earth Balance buttery spread
1/4 cup sunflower seed butter (Trader Joes)
1 cup whole wheat flour + 1/4 cup flaxseed meal mixed in
1/4 teaspoon baking soda
1/2 teaspoon baking powder
dash of salt
2 large pinches of cinnamon
1/2 teaspoon pumpkin pie spice powder
about or more than 1/3 cup brown sugar
1/2 cup soy milk
1 cup raisins

What you do: 

Preheat oven at 400C
Cook quick oatmeal until water evaporates, leaving just soft cooked oatmeal. Stir in sunflower seed butter (may substitute with peanut butter too) and Earth Balance spread.
Combine all dry ingredients. Mix in the buttery oatmeal to the dry ingredients.
Add soymilk and fold in the raisins.
Bake on lightly greased pan for 10-15 minutes or until brown at bottom.
P.S. bake goods with flaxseed meal browns quickly.
I really liked how the cookies turned out soft and chewy on the top with harder texture of browning on the bottom. ENJOY!!!

SO HOW'D IT GO?

they were good, I think they need a little more sweetness to them so i put vegan choclate icing on them and piped it in a peace symbol.... since they are peace cookies.....

Hm.  This batter was REALLY good.  I couldn't stop eating it raw, but the cooked cookies seem to be a lot less sweet in taste?  So I'll add more sugar next time.  However, they are also more cake-like (spongey) than cookie-like (hard and crumbly).
Any idea what went wrong there?  I ended up putting the rest of the batter in a small square pan to make breakfast bars since they were spongey, but I want to try these again as cookies because the batter--!!! SOOOO YUMMY!!!!
