Quick and Easy Bhindi Masala

What you need: 

2 tablespoons oil
1 medium onion, chopped
3 cloves garlic, crushed
1/2 teaspoon powdered ginger
1 teaspoon cumin powder
1/2 teaspoon nigella (kalonji) seeds
1/2 teaspoon turmeric
1 teaspoon coriander powder
2 teaspoons amchoor powder or tamarind paste
1/2 teaspoon garam masala
2 cups canned tomatoes, squished through fingers
1/2 to 1 cup water or broth, optional
2 cups canned or frozen okra

What you do: 

1. Heat oil in a heavy pan and sauté onion, garlic and ginger until soft. Add spices and mix well, frying until fragrant.
2. Add tomatoes and cook, stirring, until well blended in. If the mixture becomes too dry or wants to stick, add broth or water.
3. Finally add okra and simmer about 5 minutes.
Serve over rice.

SO HOW'D IT GO?

I made this with cauliflower instead of okra because I do NOT like okra.  I left out the nigella (kalonji) seeds because I don't have them.  I also added a bit of cayenne pepper, otherwise I followed the recipe as written.  Served over some hot jasmine rice it is a very tasty and equally important quick and easy lunch.  ;)b
