Quick and Easy Red Lentil Soup

What you need: 

2 cups vegetable broth
4 cups water
1 1/2 cups red lentils
2 cups peeled and diced russet potatoes
1 medium yellow onion, chopped
1 cup diced tomato (you can use canned)
3 cloves garlic, smashed and chopped
1/4 teaspoon cumin (or more if you prefer)
salt and freshly ground black pepper to taste

What you do: 

Place all ingredients into a large soup pot. Bring to a boil on high heat. Lower heat to low and simmer covered for 30 minutes, stirring occasionally until lentils are soft and soup is thick.
Serve with fresh bread and vegan buttery spread.

SO HOW'D IT GO?

This was quick, I needed a soup to take to work for lunch. I added a few more spices and it was perfect..

I too found this slightly bland, but still delicious and super easy.  Definitely will add more spices next time.

This was a good, basic recipe, but I found it a little bland. Not that that's always a bad thing, mind you...but I was just hoping for a little more flavor. I might experiment with it and see what else I can add to it. It's very healthy, though, which is always a good thing!
