Ratatouille for Picky Eaters

What you need: 

3 tablespoons vegetable oil (I use Smart Balance oil)
1 (6-ounce) can tomato paste
2 teaspoon organic minced garlic
1 (15-ounce) can diced tomatoes
1 (15-ounce) can vegetable broth
1 eggplant, removed skin and slice
3 medium yellow squash, sliced
salt, to taste
pepper, to taste

What you do: 

this doesnt take long to get together. I have never made this before but loved how easy it actually was.ok,
1. In a pan, heat 3 tablespoons vegetable oil over low heat. Add tomato paste and garlic.
2. Once it heated and the tomato paste "loosened" up, add diced tomatoes and vegetable broth. Heat for a few minutes, then add eggplant and squash. (You can add more veggies or more spices- - and you can add whatever else you want, but my daughter wouldn't eat any other veggies so this is all I added.)
3. Cooked on low-medium heat for about 20 minutes until the veggies are soft and translucent. Season with salt and pepper. Served this over rice with a slice of yummy hot french bread! enjoy!
Source of recipe: I wanted to make a nice french vegan meal for my daughter-who hates everything! She ate it! she had seconds!
